Mixing Bowls

Having a variety of sizes—small, medium, and large—can significantly streamline your baking. I prefer using grams/ml because it's a more accurate measure, but not all recipes accommodate. Digital is easier to see, but of course it's a matter of preference. You'll also want to have an option to move the viewer away from the base in case the bowl is too big to see the measure.

Whisk

For example, when making meringue, the balloon whisk helps incorporate air to achieve the light, fluffy texture desired. A sturdy whisk with a comfortable handle will make all the difference, as it allows you to mix effortlessly without straining your wrist.
If you have arthritis or other problems with operating a hand whisk, the attachments that come with a hand-held mixer or a stand mixer will be sufficient (and efficient).
Rubber Spatula
A rubber spatula is invaluable in the baking process. It helps scrape down bowls effectively and is perfect for folding ingredients together, ensuring no batter goes to waste.
Opt for a heat-resistant silicone spatula. This allows for easy mixing of hot mixtures, which is particularly useful when preparing fudge or melted chocolate. A high-quality rubber spatula should combine flexibility with sturdiness, making it ideal for varied tasks, from folding to scraping.
For your sourdough bread adventures, a stainless steel bench scraper is the absolute best IMO. It's a sturdy option and cleans easily.

Baking Sheets/Pans
Baking sheets are essential for cookies, pastries, and even roasting. Investing in heavy-duty, non-stick sheets can enhance the outcome of your baked goods by promoting even cooking and browning. Stainless Steel is the best buy overall. USA Pans are my choice because they bake evenly and clean easily. They may be purchased at a number of online outlets.
Having both rimmed and rimless sheets offers versatility. Rimmed sheets can be great for cookies, while rimless ones are perfect for pizza and pastries. Remember to line your sheets with parchment paper; this simple step not only aids in cleanup but dramatically reduces the risk of sticking. There are specialty pans for various types of baking so do your homework and pick what works best for the specific application. Experimenting here may get expensive so start with the basic sheet pans.
Rolling Pin
For fans of cookies, pastries, or homemade pizza, a rolling pin is essential. A good rolling pin enables you to roll dough into the desired thickness quickly.
Choose one that feels comfortable in your hands. Wooden pins are classic, while silicone options provide an easy-release surface. For instance, if you’re rolling out cookie dough for holiday treats, a quality rolling pin ensures uniform thickness, ensuring even baking across the batch. Early on I discovered a silicone pin without handles worked best for me because the wooden with handles was too heavy and with the handless option I can use the palms of my hands (instead of my fingers) to roll out evenly.
Cookie scoops
Lest we forget, cookie scoops are incredibly useful tools. Get a stainless steel version in small, medium and large. Good for filling cupcake holders, sizing up cookies and brownies, and a number of other things you won't know you need them for until you don't have them. Get the spring loaded kind that scrape out the last bits. Any brand, just don't do these on the cheap.
Bread Thermometer
When baking sourdough bread, you really do want to be sure the internal temperature of the loaf is sufficient to call it 'done'. For a regular sourdough boule or loaf, the internal temperature should be 205ºF-211ºF. For sandwich bread, 199ºF is sufficient. A lighted, digital thermometer is the best option and it should be the simplest thing you can get. I have had the same one since the day I started baking and love it. Not too fancy.

Cooling Rack
Once your baked goods come out of the oven, cooling is vital. A cooling rack allows air to circulate around your treats, preventing them from becoming soggy.
Select a sturdy rack that can hold multiple batches. Stackable options are especially useful for small kitchens. A good cooling rack ensures that your cookies remain crispy, and breads maintain their texture, enabling you to serve perfect treats every time. Don't break the bank though; get something simple. You can even use a roaster rack covered with parchment if you have that. Just be sure air can get around your baked item.
